OLIVE & CATALAN CREAM
No better season to launch our Mediterranean fries special, the ‘Olive and Catalan cream’, than in summer!
Think of our crispy French fries, a Catalan sun and southern flavours. Sergio decided to create this tasty and exclusive Frites Atelier combination while he was working on his latest cookbook ‘Sobremesa’.
In this cookbook Sergio gives the reader a culinary tour of his Ibiza. The book will be published in the second part of August, but in all six branches of Frites Atelier you can already taste the flavours you can expect.
This fragrant and colourful Frites special consists of Frites sprinkled with black olive powder and flat parsley and a spicy tomato sauce, aïoli, a zest of lemon with a mix of young salad shoots on top.
In Catalan cuisine, they have placed aïoli on a pedestal, the sauce is made from freshly crushed garlic to which virgin olive oil has been added, resulting in a soft, aromatic creamy cream. This Mediterranean taste experience is a delight to the palate!

THE BASIC INGREDIENT IS OUR LOVE FOR FRENCH FRIES (FRITES)
Frites Atelier evolved from our business founders’ love for French fries. Everyone eats fries: we believe that nothing is nicer than a delicious serving of fries or hot chips topped with a matching sauce. And who is the one you need to make the best fries ever? Exactly, star-rated Chef Sergio Herman. After more than 18 months of testing different potato varieties, researching soil types and other issues related to creating top quality fries, the time has finally arrived. The opening of the first Frites Atelier became reality in The Hague in 2016; Later more businesses were opened in Utrecht, Arnhem, Antwerp, Ghent and Brussels.

Driven by my passion for cooking, I took the Oud Sluis restaurant to the very highest of culinary levels; a 3-star Michelin rating. Since then, I have given myself a new culinary challenge: French fries. For more than one and a half years we tested and tasted potatoes with just one aim: to prepare beautiful, delicious fries with sensational toppings for you!
