“Top ‘frites’ start with top potatoes. After 18 months of experimenting with potatoes, various baking methods and after many tastings, I found the most beautiful potato in the clay of Zeeland. Our French fries stay creamy soft on the inside and become nice and crunchy on the outside. I leave the thin skins on them for that extra earthy flavour plus a pleasant crunchy structure.” – Sergio

OLIVE & CATALAN CREAM
‘Re-experience the summer again and again with our Olive & Catalan Cream. This special is inspired by the classic Catalan kitchen, in which Aioli is the main player. This creamy sauce is made with fresh crushed garlic with olive oil of the first pressing. Our Frites are sprinkled with olive powder and lemon zest and served with a spicy tomato sauce and a mix of young lettuce shoots and fresh parsley.

CRISPY CROQUETTE COLLECTION
In response to your appreciation for our Zeeland shrimp croquettes, I started to work further on the idea of compiling a selection of restaurant-standard croquettes based on pure quality products associated with my signature. Hereby the launch of the Crispy Croquet Collection by Sergio Herman.
ZEELAND SHRIMP CROQUETTE
The classic of classics, the shrimp croquette! This croquette is made to a personal recipe and I wanted to go for nothing less than flavour and quality expected at restaurant level. This shrimp croquette is now also on the menu at AIRrepublic*. Shrimp are also referred to as ‘North Sea Caviar’ due to their exclusive nature and exceptionally beautiful flavour.
SLOW COOKED BEEF CROQUETTE
The beef that is used for the salpicon of these croquettes is beautiful selected shoulder cuts that are slow-cooked in a hearty oxtail broth. The supremacy of our meat croquettes is enhanced by a combination of pepper mayonnaise and a fresh accompanying pickle-mix.
PREMIUM CHEESE CROQUETTE
The cheese croquette that I have developed contains 3 ab-so-lute top cheeses, namely Swiss Gruyere, Italian Parmesan and a mature Cheddar cheese, originally from England. The full creamy taste of this filling is beyond comparison to industrial cheese croquettes. This croquette is lightly sprinkled with fresh tomato powder and served with basil mayonnaise.
We were searching for alcohol-free drinks that would combine perfectly with our French fries and eventually, a range of homemade iced teas emerged of which we offer two every day in our Ateliers. The fresh and invigorating flavours of fruits and herbs combine very well with the earthy flavour of potatoes.
