Our French fries stay creamy soft on the inside and become nice and crunchy on the outside. I leave the thin skins on them for that extra earthy flavour plus a pleasant crunchy structure.” – Sergio

“Perfect French fries are not too salty but certainly not bland either. We season our fries with salt extracted from the saltwort plant. I love the silty taste of this Zeeland marine plant. It is much less harsh than cooking salt and therefore much more flavoursome.” – Sergio

French fries or hot chips taste delicious, but with our homemade sauces, they taste even better. At Frites Ateliers, you can tap your own homemade French fries sauce. Sergio Herman – The culinary mastermind behind Frites Ateliers – has developed the recipes for all of the Frites Atelier sauces which are all free from preservatives and artificial fragrances, colours and flavours.

DEEP TRUFFLE

Our classic mayonnaise with shaved fresh truffle. The truffles don’t necessarily come from Italy, but from wherever conditions are best at the time.

This mayonnaise is based on the classic French sauce made from tarragon vinegar based on shallots, tarragon and black peppercorns. This mayonnaise has extra fresh tarragon added to it.

The beef that is used for the salpicon of these croquettes is beautiful selected shoulder cuts that are slow-cooked in a hearty oxtail broth. The supremacy of our meat croquettes is enhanced by a combination of pepper mayonnaise and a fresh accompanying pickle-mix.

The cheese croquette that I have developed contains 3 ab-so-lute top cheeses, namely Swiss Gruyere, Italian Parmesan and a mature Cheddar cheese, originally from England. The full creamy taste of this filling is beyond comparison to industrial cheese croquettes. This croquette is lightly sprinkled with fresh tomato powder and served with basil mayonnaise.
